Octopus Tentacles 八爪魚觸手

The octopus is boiled, but then it’s completely chilled. Serving it cold does something interesting to the texture. Instead of being soft or mushy, it gets this really firm, snappy bite to it. You actually have to work your jaw a bit, but it’s incredibly satisfying.

They chop the tentacles into thick pieces and throw them into a plastic bag with a tangle of thin noodles—usually slippery glass noodles or fine wheat noodles. Then they drench the whole thing in a sticky, sweet-and-sour plum and vinegar sauce, maybe with a little garlic or chili mixed in.

The noodles soak up all that tangy dressing, while the cold, chewy octopus cuts right through the sweetness. You’re usually just standing on the sidewalk eating it with a tiny plastic fork or a bamboo stick. When it’s a ridiculously hot, humid night in the city, having something ice-cold, sour, and snappy is an absolute lifesaver. It’s messy, it’s sharp, and it’s exactly the kind of weird street food logic that just makes perfect sense when you’re actually there.

章魚雖然係烚熟嘅,但之後會徹底雪凍。凍食令到佢嘅口感發生咗好特別嘅變化,唔會淋或者腍,反而變得非常實淨,咬落去有種實淨彈牙嘅感覺。雖然咬嗰陣要稍微用多啲力,但嗰種口感真係超級過癮。

檔主會將章魚鬚切做厚件,然後同埋一團幼麵一齊裝入膠袋度——通常係滑捋捋嘅冬粉或者幼麵。接著會淋上滿滿嘅酸甜梅子醋汁,有時仲會加少少蒜蓉或者辣椒拌勻。

麵條吸晒啲酸甜嘅汁,而凍凍地、有咬口嘅章魚就剛好中和咗嗰種甜膩,食落完全唔會覺得滯。你通常都係企喺行人路邊,用支細細粒嘅膠叉或者竹籤嚟食。當城市嘅夜晚熱到癲、又焗又濕嗰陣,食啲冰凍、酸爽又彈牙嘅嘢,真係可以救命。雖然食得有點甩漏,味道又夠刺激,但呢種看似奇怪嘅街頭小食邏輯,只要你親身試過,就會覺得一切都非常合理。
